Authentic Mexican cooking is a world-class cuisine that has remained virtually unchanged by the outside world," says Executive Chef Hugo Ortega of his native cuisine. "The food is full of light, fresh tastes; deep, complex flavors; and earthy notes, all combined to create a cuisine like no other."
With the eatery, local restauranteur Tracy Vaught and Ortega, went in a new culinary direction, serving Regional Mexican Cuisine, a food that is extremely diverse - as light and fresh as a seafood cocktail prepared by fishermen on the beach; as deep and complex as the moles of Oaxaca made with an astounding number of ingredients; and as earthy as the simplest homemade corn tortilla.
Hugo’s opened in 2002 in Houston’s bustling Montrose area. The restaurant is housed in a 1925 structure that was designed and built by well-known Houston architect, Joseph Finger, who is also responsible for Houston's Art-Deco style City Hall. The Latin-inspired building has been lovingly restored to feature its original beauty, and the interiors designed to include both "chic" contemporary touches and, most important, inviting traditional elements of old Mexico.
